Carciofini al Carpaccio - Artichokes Carpaccio -

A healthy way to eat artichokes, and a cool dish for the summer. By eating the artichokes uncooked, we preserve all the vitamins and minerals they contain. They are also low in fat, high in fibre, and one of the richest sources of antioxidants. The dressing we are using is also healthy and the parmesan is a good source of proteins and fat.      Buon Appetito!
