This is a typical Puglian dish, also called 'strascinati' because it is made by squashing and dragging the pasta on the work surface.
This pasta is made without eggs, served with a sauce made with tender broccoli and anchovies.
For a vegetarian sauce choose aubergines and tomatoes or mushroom.
